Ingredients
- 2 cups chilled mashed potatoes
- 2 eggs, slighty beaten (separate bowls)
- 2 tablespoos chopped onion
- 1/2 tablespoon black pepper
- 1/2 cup flour for dredging
- 1 cup Panko bread crumbs
- 3 tablespoons vegetable oil for pan frying
Directions

Heat vegetable oil in a large skillet over medium hea-high heat.

In medium bowl. combine potatoes, one egg, onion and pepper.

Divide potato mixture ito 8 equal portions forming 1/ inch patties.

Dredge patties in flour, then in egg and coat with panco crumbs.

Add potato patties to he hot oil cooking until browned, turn and brown on other side.
