Panko Crusted Mashed Potato Cakes

Ingredients

  • 2 cups chilled mashed potatoes
  • 2 eggs, slighty beaten (separate bowls)
  • 2 tablespoos chopped onion
  • 1/2 tablespoon black pepper
  • 1/2 cup flour for dredging
  • 1 cup Panko bread crumbs
  • 3 tablespoons vegetable oil for pan frying

Directions

  1. Heat vegetable oil in a large skillet over medium hea-high heat.

  2. In medium bowl. combine potatoes, one egg, onion and pepper.

  3. Divide potato mixture ito 8 equal portions forming 1/ inch patties.

  4. Dredge patties in flour, then in egg and coat with panco crumbs.

  5. Add potato patties to he hot oil cooking until browned, turn and brown on other side.
