Spaghetti Cabonara

Ingredients
- 1 lb. spaghetti noodles
- 1 lb. bacon, chopped
- 4 eggs, well beaten, one per serving
- 1 c. Romano or Parmesan cheese, grated
- 1/2 tsp. pepper
Directions

Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

Meanwhile, place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, reserving some of the drippings, crumble and set aside.

Mix and blend eggs, cheese, and pepper in a bowl.

Place drained noodles in pan with bacon grease. When sizzling, add sauce and remove from heat mixing well.

Crumble bacon on top.

If too thin, add cheese. If too thick, add pasta water. Sauce should be creamy, but not thin.
