Shirred Lemon Eggs

Ingredients

  • Butter for the ramekin
  • 4 T. heavy cream divided
  • 1 t. lemon zest
  • 3 T. grated Gouda cheese divided
  • 2 eggs
  • Salt and pepper to taste
  • 1-1/2 t. minced herbs or 1/2 t. dried

Directions

  1. Preheat oven to 325°. Butter one oval ramekin well.

  2. Pour 2 tablespoon of cream in ramekin. Sprinkle lemon zest and cheese over the cream in ramekin. Salt and pepper to taste.

  3. Crack 2 eggs into the ramekin. Pour remaining 2 tablespoons of cream over the eggs. Scatter herbs over the top. Bake for 12 to 16 minutes, until the white is cooked but the yolk still soft and a bit runny.
