Shirred Lemon Eggs

Ingredients
- Butter for the ramekin
- 4 T. heavy cream divided
- 1 t. lemon zest
- 3 T. grated Gouda cheese divided
- 2 eggs
- Salt and pepper to taste
- 1-1/2 t. minced herbs or 1/2 t. dried
Directions

Preheat oven to 325°. Butter one oval ramekin well.

Pour 2 tablespoon of cream in ramekin. Sprinkle lemon zest and cheese over the cream in ramekin. Salt and pepper to taste.

Crack 2 eggs into the ramekin. Pour remaining 2 tablespoons of cream over the eggs. Scatter herbs over the top. Bake for 12 to 16 minutes, until the white is cooked but the yolk still soft and a bit runny.
