Stuffed Mushrooms

Ingredients

  • 1 pound(s) mushrooms
  • 6 tablespoon(s) butter
  • 1 cup(s) onion chopped
  • 2 cloves garlic, minced
  • 1 cup(s) bread crumbs
  • 1/4 cup(s) parsley chopped
  • 1 cup(s) cheddar cheese (4 oz) shredded or mozzarella cheese
  • 1/2 teaspoon(s) salt
  • 1/4 teaspoon(s) pepper

Directions

  1. Rinse, pat dry & remove stems from mushrooms. Chop stems (makes about 1 1/2 cups) set aside.
  2. In large skillet, melt butter. Brush mushroom caps with butter and place on lightly buttered shallow baking dish.
  3. To butter remaining in skillet, add onions, garlic, chopped mushroom stems and saute for a few minutes. Add bread crumbs, cheese, parsley, salt & pepper. Stir lightly until bread crumbs are lightly browned.
  4. Spoon into mushroom caps, piling high. Bake in preheated oven 350 degrees until hot about 20 minutes.
  5. You can make a day ahead and cover and refrigerate until ready to bake.
