Stuffed Mushrooms

Ingredients
- 1 pound(s) mushrooms
- 6 tablespoon(s) butter
- 1 cup(s) onion chopped
- 2 cloves garlic, minced
- 1 cup(s) bread crumbs
- 1/4 cup(s) parsley chopped
- 1 cup(s) cheddar cheese (4 oz) shredded or mozzarella cheese
- 1/2 teaspoon(s) salt
- 1/4 teaspoon(s) pepper
Directions
- Rinse, pat dry & remove stems from mushrooms. Chop stems (makes about 1 1/2 cups) set aside.
- In large skillet, melt butter. Brush mushroom caps with butter and place on lightly buttered shallow baking dish.
- To butter remaining in skillet, add onions, garlic, chopped mushroom stems and saute for a few minutes. Add bread crumbs, cheese, parsley, salt & pepper. Stir lightly until bread crumbs are lightly browned.
- Spoon into mushroom caps, piling high. Bake in preheated oven 350 degrees until hot about 20 minutes.
- You can make a day ahead and cover and refrigerate until ready to bake.
