- 1/2 cup Chickpeas, drained and rinsed 1 Tbs. Extra Virgin Olive Oil 1 Lemon, squeezed $ tsp. Black Pepper, freshly ground
- 2 cup Baby Spinach Leaves

Put the drained chickpeas into a large mixing bowl. Combine the remaining ingredients with the chickpeas and stir well. Chill before serving.
