Buttermilk Waffles with Strawberry Topping

Ingredients
- 2 cups fresh or frozen strawberries
- 2 tablespoons maple syrup
- 2 teaspoons fresh lemon juice
- 3/4 cup all-purpose flour
- 3/4 cup whole wheat flour
- 2 tablespoons toasted wheat germ
- 1 1/4 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cups lowfat buttermilk
- 1 tablespoon canola oil
- 1 tablespoon honey
- 1 large egg
- 1/2 teaspoon vanilla extract
- cooking spray
- confectioner's sugar

In a medium saucepan, stir together strawberries, maple syrup, and lemon juice and bring to a gentle boil. Reduce heat to medium-low and simmer for 5 minutes until the liquid has thickened slightly. Flavor with additional maple syrup if desired. Remove from heat and set aside.

Preheat a waffle iron. Meanwhile, in a large bowl, whisk together both flours, wheat germ, baking powder, baking soda, and salt. In another large bowl, whisk together buttermilk, oil, honey, egg, and vanilla. Stir the wet ingredients into the dry ingredients until just combined.

Coat the inside of the heated waffle iron with cooking spray. Ladle on enough batter to cover three-quarters of the surface, close lid, and cookk for 3 minutes or until golden brown. Repeat with remaining batter to make four waffles. Serve topped with strawberry mixture and an optional dusting of confectioner’s sugar.
