Vegetarian Italian Meatballs

Haven’t tried these yet, but they sound good

Prep time: 15 minutes
Cook time: 30 minutes

Ingredients

  • 4 eggs, beaten
  • 1 C. Parmesan, grated
  • 1/2 C. cottage cheese
  • 1 C. pecans, finely chopped
  • 1 t. Italian seasoning
  • 1 t. salt
  • 2 C. Italian seasoned bread crumbs

Directions

  1. Preheat oven to 350°. Spray 9X13 baking dish with cooking spray or lightly oil.

  2. Mix all ingredients together. (This can be done in a food processor.)

  3. Spray your hands with cooking spray or use a little oil; roll mixture into 1-1/2” balls and place in baking dish. Bake for 25-30 minutes.

  4. Gently simmer in spaghetti sauce for a few minutes and serve with your favorite pasta.
