Apple-blueberry corn muffins

Ingredients

  • Whites from 2 large eggs
  • 1/2 cup unsweetened applesauce
  • 1 package of corn muffin mix (8 1/2 oz)
  • 1 cup blueberries

Directions

  1. Heat oven to 375. Grease (well) 6 regular muffin cups.

  2. Mix egg whites, applesauce and muffin mix. Stir in berries. Spoon into muffin cups.

  3. Bake 20 minutes. Remove from pan, cool and serve or freeze. Spread a little fat-free cream cheese on this muffin, and grab a banana befoer you go out…great breakfast.
