Pecan-Coated Tilapia

Ingredients

  • 1/2 c. dry bread crumbs
  • 2 T. finely chopped pecans
  • 1/2 t. salt
  • 1/4 t. garlic powder
  • 1/4 t. black peper
  • 1/2 c. low-fat buttermilk
  • 1/2 c. hot sauce
  • 3 T four
  • 4 (6-ounce) Tilapia fillets
  • 1 T canola oil, divided
  • 4 lemon wedges

Directions

  1. Combine bread crumbs, pecans, salt, garlic powder and pepper in a shallow dish.

  2. Combine buttermilk and hot sauce in a medium bowl; place flour in a shallow dish.

  3. Dredge each fillet in flour; dip in buttermilk mixture and coat in bread crumb mixture.

  4. In a large nonstick skillet, heat 1 1/2 t. oil on medium high.

  5. Cook 2 fillets 3 minutes per side or until fish flakes easily with a fork.

  6. Repeat with remaining oil and fillets.

  7. Service with lemon wedges
