Spicy Mulligatawny

A warm spicy Indian soup

Ingredients

  • 1 tablespoon vegetable oil, divided
  • 1/2 pound boneless chicken breast, cut into bite-sized pieces
  • 1 cup Gala apples, chopped peeled
  • 3/4 cup onion, chopped
  • 1/2 cup carrot, chopped
  • 1/2 cup celery, chopped
  • 1/2 cup red bell pepper, chopped
  • 2 tablespoons flour
  • 1 tablespoon curry powder
  • 1 teaspoon ground ginger
  • 1/2 teaspoon crushed red pepper
  • 1/2 teaspoon salt
  • 2 cans of chicken broth
  • 1/3 cup mango chutney
  • 1/4 tomato paste

Directions

  1. Heat 1 teaspoon of oil in a Dutch oven over medium high heat. Add chicken, and saute’ 3 minutes. Remove from pan, set aside

  2. Heat 2 teaspoons of oil in pan. Add apple and next 4 ingredients, saute for about 5 minutes. Stir in next 4 ingrediants(flour-salt). Cook for a minute then add the rest of the ingrediants

  3. reduce heat, simmer 8 minutes. Return chicken to pan, cook until mixture is thoroughly heated. Sprinkle with parsley.
