Honey Glazed Carrots with Cilantro

Ingredients

  • 6 med carrots, halved lengthwise cut into 2"pcs
  • 1tbsp olive oil
  • 2c water
  • 1tbsp honey
  • 2 tbsp dry white wine
  • low sodium chicken broth or water
  • 2tbsp finely chopped cilantro

Directions

  1. In large skillet combine carrots and olive oil. Add just enough water to cover carrots about 2 c. Cook over medium-high until water is evaporated and carrots are tender, 15 min. cook tossing often until carrots are light golden, 2 min. Add honey and dry white wine, and chicken broth. Cook stirring and scraping up brown bits with a wooden spoon until carrots are glazed, 2 min. stir in cilantro.
