Ingredients
- 1 lb russet potatoes cut into 1"pcs
- 2 tsp olive oil
- 2 tbsp red wine vinegar
- 1tsp dijon mustard
- 1 hard cooked large egg
- 1/2 small red onion
Directions

Set a steamer basket in a saucepan with 1"simmering water.

Add 1lb potatoes, cover and steam until tender.

Transfer to med bowl add olive oil, red wine vinegar, and dijon mustard, toss.

Using large grater grate 1 large egg.

Add 1/2 small red onion thinly sliced.

Season s/p, toss to combine.
