Warm Potato Salad

Ingredients

  • 1 lb russet potatoes cut into 1"pcs
  • 2 tsp olive oil
  • 2 tbsp red wine vinegar
  • 1tsp dijon mustard
  • 1 hard cooked large egg
  • 1/2 small red onion

Directions

  1. Set a steamer basket in a saucepan with 1"simmering water.

  2. Add 1lb potatoes, cover and steam until tender.

  3. Transfer to med bowl add olive oil, red wine vinegar, and dijon mustard, toss.

  4. Using large grater grate 1 large egg.

  5. Add 1/2 small red onion thinly sliced.

  6. Season s/p, toss to combine.
