Ingredients
- 3c flour spooned and leveled
- 1tbsp baking powder
- 1 tsp baking soda
- 1/2 tsp fine salt
- 1 can (15.5 oz) cannellini beans rinsed and drained
- 1/4c (1/2stick) unsalted butter, room temp
- 2c sugar
- 2 large eggs + 2 egg whites
- 1c buttermilk
- 1tsp pure vanilla extract
- 3c confectioner sugar sifted
- 1/4c fruit puree from 9oz fruit thawed and drained

Preheat oven 350 with racks in middle and lower thirds. line 24 muffin cups. In large bowl whisk together flour, baking powder, baking soda and salt. IN food processor combine beans, butter and sugard process until smooth. with machine running add eggs, and egg whites process until incorporated. Stir into flour mixture until well combined. Stir in buttermilk and vanilla.

Divide batter among muffin cups and bake until puffed and set, about 17 min. rotate pans halfway through. Transfer to wire racks to cook completely.

Whisk together confectioners sugar and fruit buree until smooth. Dip top of cupcake into glaze let excess drip off.
