My Chocolate Thingys

Super simple, fast dessert when there’s a chocolate craving at hand. It’s a bit of a mock souffle
Prep time: 10 minutes
Cook time: 20 minutes
Serves 3 people

Ingredients
- 2 oz. bittersweet chocolate chopped
- 1/4 cup milk
- 1 large egg
- 1 Tablespoon sugar
- whipped cream for garnish

Heat oven to 325 degrees.

Heat the milk in the microwave for 30 seconds, pour over the chopped chocolate and let sit for 30 seconds. Then stir smooth.

Beat the whole egg and sugar with a hand beater (you can just whisk it, too, but it’s going to be a workout), until it’s lemon colored and thick and flows off the beater in a ribbon (no glops or drips).

Lighten the melted chocolate with two tablespoons of the beaten egg (just stir it in), and then fold the chocolate into the rest of the egg mixture.

Pour into three four ounce ramkins. Place the ramkins in an 8×8 pan, put the pan into the oven and then pour boiling water halfway up their sides. Bake 20 minutes or until they’ve poofed and don’t look too wet.

Pull from the oven and let sit five minutes before placing the ramkins on a plate and topping the chocolate thingy’s with whipped cream.
