Pork Sauce over Chinese Noodles

Serves 4 people
Ingredients
- 2 tsp vegetable oil
- 1 lb ground pork
- 1/4 lb white mushrooms, sliced
- 3 scallions, sliced
- 2 cups chicken broth
- 1/4 cup hoisin sauce
- 2 tbsp reduced-sodium soy sauce
- 1 tbsp cornstarch
- 1 tbsp rice vinegar
- 3/4 tsp Asian chili paste
- 1 medium-size head Napa cabbage, trimmed and sliced
- 1 package (8-10 oz) Chinese noodles
- 2 tsp sesame oil
Directions

In a large non-stick skillet, heat oil over medium-high heat.

Add pork and cook for 5 minutes, breaking up meat with a wooden spoon.

Add mushrooms, scallions and garlic and cook for an additional 4 minutes, stirring occasionally.

In a small bowl, whisk together the chicken broth, hoisin sauce, soy sauce, cornstarch, vinegar and chili paste.

Add to skillet and simmer 3 minutes, stirring occasionally. Keep warm.

Meanwhile, bring a large pot of water to a boil.

Add cabbage, cover and bring back to a boil.

Add noodles and cook following instructions.

Drain; place in a large bowl; toss with sesame oil.

Spoon sauce over noodles and serve.
