Classic Yellow Cake Batter

Use this to make Raspberry cream layer cake.

Ingredients
- !c unsalted butter
- 1 3/4 c sugar
- 4 large eggs + 2 large egg yolks
- 1 tbsp pure vanilla extract
- 3 c cake flour spooned and leveled
- 1 tbsp baking powder
- 1/2 tsp fine salt
- 3/4 c buttermilk
Directions

Bring cold ingredients to room temp. butter should be cold enought to hold a thumbprint but still keep its shape.

In large bowl use electric mixer beat 1 c unsalted butter and 1 3/4 c sugar on high until light and fluffy about 6 min.

Beat in 4 large eggs + 2 large egg yolkds, one at a time until combined. Beat in 1 tbsp pure vanilla extract.

In another large bowl whisk together 3 c cake flour (spooned and leveled) 1 tbsp baking powder and 1/2 tsp fine salt.

With mixer on low add 1/3 of flour mixter to butter mixture beating to combine.

Beat in 3/4 c buttermilk, another 1/3 of flour mixture, another 3/4 c buttermilk and remainign flour mixture until just combined. crape down bowl as needed.
