Broccoli Casserole

Ingredients

  • 2 cans low sodium Cream of Mushroom soup
  • 6 eggs
  • 1 16-18 oz bag shredded sharp cheddar cheese
  • 2 tbsp mayonaise
  • 4 florets of fresh broccoli

Directions

  1. Preheat Oven to 375 degrees

  2. Steam broccoli until soft, cut off stems and leaves, discard

  3. Finely chop remaining head of broccoli put aside

  4. Crack all 6 eggs in bowl and wisk with mayo well, add mushroom soup and stir well.

  5. Add broccoli and shredded cheese mix well

  6. place in 2 qt casserole dish and bake at for 45-1hour until light and fluffy cool 10 min bfr serving
