Slow cooked Chicken Caccitore

Serves 6 people

Ingredients

  • 1 Tblsp olive oil
  • 3 lbs chicken cut into pieces
  • 4 cloves of garlic, minced
  • 2 tsp italian seasoning
  • 1 28 oz can of crushed tomatoes in puree
  • 1 lb mushrooms, cut in half
  • 2 large onions chopped
  • 1 med green pepper cut into strips
  • 1/2 swanson chicken broth
  • 1/4 c cornstarch
  • 1 pkg fettucini or rotini cooked and drained

Directions

  1. Heat oil in skillet over med-high heat

  2. Add chicken and cook until brown on all sides

  3. In a Crockpot Stir in garlic, italian seasoning, tomatoes, mushrooms, onions, pepper, and 1 cup of chicken stock, add chicken and stir to coat

  4. Cover and cook 7-8 hours on low until all is cooked thouroghly

  5. Stir cornstarch and remaining stock in small bowl together until mixed, add to crockpot to thicken cover and cook 10 more minutes on high until mixture boils.

  6. Serve with pasta
