Herb Crusted Roast Beef

Ingredients
- 3/4 c fresh bread crumbs
- 3 tbsp chopped parsley
- 2 tbsp horseradish, drained
- 1 tsp salt, divided
- 3 lb eye-round roast beef
- 1 tbsp sour cream
- 2 1/2 lbs small red potatoes
Directions

Heat oven to 325’.

In small bowl, combine bread crumbs, parsley, horseradish & 1/2 tsp salt

Sprinkle remaining salt over beef.

Spread sour cream on top and over with bread crumbs.

Toss 2 1/2 lbs small red potatoes with olive oil, salt & pepper and roast them in the pan alongside the beef

Place in roasting pan and cook 75 minutes or until meat thermometer reads 135’. Let stand 15 minutes.
