Herb Crusted Roast Beef

Cook time: 75 minutes
Serves 8 people

Ingredients

  • 3/4 c fresh bread crumbs
  • 3 tbsp chopped parsley
  • 2 tbsp horseradish, drained
  • 1 tsp salt, divided
  • 3 lb eye-round roast beef
  • 1 tbsp sour cream
  • 2 1/2 lbs small red potatoes

Directions

  1. Heat oven to 325’.

  2. In small bowl, combine bread crumbs, parsley, horseradish & 1/2 tsp salt

  3. Sprinkle remaining salt over beef.

  4. Spread sour cream on top and over with bread crumbs.

  5. Toss 2 1/2 lbs small red potatoes with olive oil, salt & pepper and roast them in the pan alongside the beef

  6. Place in roasting pan and cook 75 minutes or until meat thermometer reads 135’. Let stand 15 minutes.
