Grilled Shrimp & Pineapple

Ingredients

  • 1 1/4 lbs fresh or frozen large shrimp, in shells
  • 1 C bottled barbecue sauce
  • 2/3 c unsweetened pineapple juice
  • 2 tbsp cooking oil
  • 4 tsp grated fresh ginger or 1 1/2 tsp ground ginger
  • 1/4 of a fresh pineapple cut into wedges

Directions

  1. Thaw shrimp if frozen.

  2. For sauce, in medium bowl, stir together barbecue sauce, pineapple juice, oil & ginger. Set aside

  3. Peel and devein shrimp, leaving tails intact. Thread shrimp onto 6 long skewers; brush with sauce.

  4. Grill shrimp on rack of uncovered grill over medium-hot coals for 10-12 minutes until opaque, turning once halfway through. Brush will sauce the last 2 minutes of grilling.

  5. Thread pineapple onto 3 long skewers. Add pineapple skewers to the grill for the last 5 minutes of cooking time, turning once and brushing with sauce halfway through grilling time.

  6. Heat remaining sauce to boiling; serve with shrimp & pineapple for dipping.
