French bean salad with mint

Ingredients

  • 500g French beans, topped
  • 3 fresh mint sprigs
  • 1 garlic clove, peeled
  • 4 tbsp extra-virgin olive oil
  • juice of 1 small lemon

Directions

  1. Cook the beans in a pan of boiling, salted water, until tender. Drain and quickly refresh under cold running water.

  2. Finely chop the mint and garlic with a sharp knife. Transfer to a large bowl and mix in the olive oil and lemon juice until well combined. Season to taste. Fold in the beans until evenly coated. Serve warm or cold.
