French bean salad with mint

Ingredients
- 500g French beans, topped
- 3 fresh mint sprigs
- 1 garlic clove, peeled
- 4 tbsp extra-virgin olive oil
- juice of 1 small lemon
Directions

Cook the beans in a pan of boiling, salted water, until tender. Drain and quickly refresh under cold running water.

Finely chop the mint and garlic with a sharp knife. Transfer to a large bowl and mix in the olive oil and lemon juice until well combined. Season to taste. Fold in the beans until evenly coated. Serve warm or cold.
