Ingredients
- 1c+ 1 tbsp flour spooned/leveled
- 1c fine yellow cornmeal
- 1/3 c sugar
- 1 tbsp baking powder
- 1/2 tsp fine salt
- 1c low fat plain yogurt
- 3 tbsp unsalted butter melted and cooled
- 1 tsp pure vanilla extract
- 2 tsp finely grated orange zest + 2 tsp oj
- 1 1/4 c blueberries
- 1/3 c confectioners sugar

eheat oven 400. Line muffin cups. In large bowl whisk together 1 c flour, cornmeal, sugar, baking powder and salt. In small bowl whisk yogurt, butter vanilla and orange zest. Add to flour mixture, stir until combined, do not overmix.

In med bowl toss blueberries with 1 tbsp flour to coat, then fold into batter. Divide batter among muffin cups. Bake until puffed and set about 20 min. rotate pan halfway through. Let cool in pan on wire rack.

Stir together orange juice and confectioners sugar drizzle over muffins let glaze set about 10 min. Serve.
