Paleo Dinner Stew

Cook time: 15 minutes
Serves 3 people

Ingredients

  • Sausages, cut up into small pieces
  • Peppers, cut into strips
  • Onions, cut into strips
  • Zucchini, sliced and chopped in half so they are not too small
  • Coconut milk
  • Red curry paste
  • Olive oil or coconut oil
  • Seasoning as you like it

Directions

  1. Cook onions and peppers in coconut or olive oil until softened.

  2. Add zucchinis and sausages, cook for a minute or two.

  3. Add coconut milk and red curry paste.

  4. Cover pan and when everything is cooked to your liking, eat up!

  5. Optionally you can add couscous in the last two minutes.
