Shredded Carrot Salad

Ingredients

  • 2 tbsp olive oil
  • 1 large shallot
  • 1/4 tsp fennel seed
  • 1/4 tsp ground cumin
  • 4 c grated carrots
  • 2 tbsp lime juice
  • coarse s/p

Directions

  1. In small skillet heat olive oil over med. Add shallot diced small and cook until softened, 8 min. Add fennel see and ground cumin cook until fragrant 1 min. In med bowl toss grated carrots lime juice and shallot mixture, season with s/p.
