Ingredients
- 2lbs yukon gold poatoes about 4 med
- 1tbsp olive oil
- coarse s/p
- 1/4 c mayo
- 2tbsp fresh lemon juice
- 1 garlic clove minced
- 3/4 tsp smoked or sweet paprika
- coarse s/p

eheat oven 400. On baking sheet toss potatoes cut into 1" pieces and olive oil season s/p. Arrange in single layer and roast until potatoes are tender when pierced with knife. 35-40 min.

In small bowl whisk together mayo, lemon juice, garlic, paprika season s/p.

Serve potatoes with sauce.
