Ingredients
- 1tbsp olive oil
- 1 shallot minced
- 1/4 c red wine vinegar
- 1/4 c whole grain mustard
- 1/4 c packed dark brown sugar
- coarse s/p
- 1 side salmon about 3lbs skin removed cut into 8 filets
- 1bunch watercress thick stems trimmed
- 1 lemong cut into wedges

Heat broiler with rack in top position. In small saucepan heat oil over med high, add shallot and cook stir often until softened about 3 min. Add vinegar and cook until slightly evaporated 1 min. Season with s/p and remove from heat.

Place salmon on foile lined rimmed baking sheet and season with s/p. Transfer 1/2 c glaze to a small dish and brush on top of the salmon. Broil slamon until glaze is bubbling and fish is opaque throughout 5-10 min brush remaining glaze on fillets, serve along with watercress and lemon wedges.
