Use ribeye or cheaper cut of meat with marbling (white)throughout the meat and bone in(bone adds flavor). Use at room tempature not cold or else it won’t cook evenly. Put olive oil on top/bottom of steak and rub around and add CRACKED pepper on both sides achooo (lots because some of the seasoning will fall off while cooking) no salt yet. Place on grill (or flat grill pan) cook on one side for two minutes (flip every two minutes for total of 7-8 minutes) don’t move the steak around a lot though let it cook, less movement better. After flipping the first time add coarse salt on top of steak (flip to other side and add salt there too) keep flipping. Then near the end mix chopped garlic and olive oil in small dish. Use fresh rosemary (as a brush) and dip in olive oil and spread on the steak on both sides (while cooking) adds subtle rosemary flavor and garlic. Then add fresh herbs (other than rosemary) to the top of steak and add a pat of butter cook flip until melted and flavor comes out bubbles, then flip and repeat. Take off grill and let stand for a few/5 minutes to let the juices soak in for juicer steak.
