Cornmeal Crusted Tilapia Sandwich

Ingredients
- 2 tsp. chili powder
- 1 tsp. ground cumin
- 1/2 tsp. salt
- 1/2 tsp. thyme
- 1/8 tsp. cayenne or to taste
- 3 TBLSP cormeal
- 4 (6 oz.) tilapia, fillets
- 1 large egg, lightly beaten
- 1/4 cup light mayonaise
- 1/2 tsp, lime juice
- 1/2 tsp. lime zest
- 4 slices tomato
- 4 leave lettuce
- 4 Kaiser or sourdough rolls, split

Coat baking sheet with cooking spray.

Combine the chili powder, cumin, salt, thyme, cayenne and cornmeal on a plate. Working one at a time, dip the fish fillets first in egg, then dredge on both sides with cornmeal mixture. Place fish in a single layer, uncrowded layer on a baking sheet. Coat the tops of the fish lightly with cooking spray.

Preheat broiler. Place the fish in the oven and broil 5-6 minutes on each side or until lightly browned and cooked through.

While the fish cooks, combine the mayonnaise, lime juice and zest.

Make the sandwiches; place tomato, lettuce, fish fillet and about 1 tablespoon mayonnaise on each roll, close and servbe.
