Parmesan Chicken with Bow Ties

Ingredients

  • 12 oz bow tie pasta
  • salt & pepper
  • 2 c small broccoli florets
  • 2 tbsp olive oil
  • 1 1/2 lb chicken breast, skin & bone removed, cut into 1/2" pieces
  • 1 small onion, finely diced
  • 1 cup canned petite diced tomatoes, drained
  • 1/2 c grated parmesan

Directions

  1. Cook pasta in boiling salted water until al dente, about 10 minutes or as label directs. Add broccoli for final 3 minutes, drain – reserving 1 C liquid. Toss pasta & broccoli with 1 tbsp olive oil.

  2. Warm remaining oil in skillet over medium-high heat. Add chicken, onion, & garlic, sprinkle w/ salt & pepper; saute for 5 minutes. Add tomatoes and saute for 2 minutes. Toss in pasta, broccoli,, parmesan & 1/2 c of cooking liquid – add more liquid if dry.
