Pumpkin cupcakes

Ingredients

  • 4 eggs
  • 2 cups sugar
  • 3/4 cup vegetable oil
  • 1 can (15 oz.) solid-pack pumpkin
  • 2 cups flour
  • 2 Tsp. baking soda
  • 1 Tsp. salt
  • 1 Tsp. baking powder
  • 1 Tsp. ground cinnamon

Directions

  1. In a mixing bowl, combine the eggs, sugar, oil and pumpkin. Combine the flour, baking soda, salt, baking powder and cinnamon; add to pumpkin mixture and beat until well mixed. Fill paper-lined muffin cups 2/3 full. Bake at 350 degrees for 18-22 minutes or until a toothpick comes out clean. Makes about 1 3/4 dozen cupcakes.
