Twice Baked Potatoes

Serves 4 people
Ingredients
- 4 med potatoes
- 1/4 c. sour cream
- 2 tbs milk
- 1/4 c butter
- 1/4 tsp onion powder
- 1/3 c grated cheddar cheese
Directions

scrub potatoes, cook in microwave 8 mins. Rotate. Cook 5-7 minutes more.

When potatoes are fork tender, cut in half lengthwise; scoop out insides, salt and pepper shells

Mash potato pulp of baked potato; beat in milk, sour cream and butter until fluffy.

Stuff shells; sprinkle with cheese. Place in glass pie plate microwave for 3 minutes or until hot.
