SUMMER BERRIES AND WHITE CHOCOLATE WHIPPED CREAM

The chilled whipped cream mixture can be very easily over beaten. Therefore, we do not recommend using a hand or electric mixer.

Ingredients

  • 1 (8 oz.) carton Organic Valley Organic Heavy Whipping Cream
  • 1 (4 oz.) bar white chocolate, divided
  • 1 (16 oz.) pkg. organic strawberries, quartered
  • 1 (6 oz.) pkg. organic raspberries
  • 1 (4.4 oz.) pkg. organic blueberries

Directions

  1. In small, heavy bottomed saucepan, simmer whipping cream over medium heat (about 10 min.). Finely chop 3 oz. of white chocolate bar; remove cream from heat. Stir in chopped chocolate until melted; pour mixture into bowl. Refrigerate, covered, until cold (at least 3 hrs.). Whip the chilled mixture by hand with a wire whisk until soft peaks form (7-10 min.).

  2. To Serve: Divide berries among 6 dessert dishes; top with dollop of whipped cream. Shave curls of remaining chocolate bar over whipped cream. Serve immediately.
