Ingredients
- 3/4 cup low fat sour cream
- 2 oz. sharp cheddar or quesco fresco cheese, grated
- 1 tomato, peeled, seeded and chopped
- 4 scallions, thinly sliced
- 2-4 pickled jalapenos, thinly sliced
- 1/4 cup cilantro, coarsely chopped
- 1/2 tp ground cumin
- salt and black pepper

Preheat oven to 400

Combine all the ingredients and spread equally on tortillas.

Bake, turning once, for 10 minutes, or until lightly browned and heated through.
