Skillet Lasagna

Ingredients
- 1 pound Ground Chicken or Lean Ground Turkey
- 3 Cloves Garlic, minced
- 1 Green Pepper, diced
- 1 Onion, diced
- 1 Zucchini, chopped
- 1 Can Artichoke Hearts, chopped
- 1 Can Petite Diced Tomatoes
- 1 tbs Basil
- 1 tbs Oregano
- 1 tbs Italian Seasoning
- 1 Jar Spaghetti Sauce
- Salt and Pepper to Taste
- 1 pkg Low Fat Ricotta Cheese
- 1 pkg Mozzarella Cheese

In a large skillet over medium heat, brown ground chicken. When chicken is starting to crumble, add garlic, onion, green pepper, and zucchini. Saute until vegetables are tender.

Add artichoke, tomatoes, basil, oregano, Italian seasoning, salt, pepper, and spaghetti sauce. Simmer until heated through.

Place 1/4 cup ricotta cheese in a bowl and scoop desired amount of chicken mixture on top, top with mozzarella cheese. Microwave, covered, for 1 minute to melt cheeses.
