Chili Mac

Ingredients

  • 1 (14 oz) pkg Soy Ground Sausage
  • 1 green pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can black beans
  • 1 can diced tomatoes
  • 1-2 cans tomato sauce (depending on desired consistency)
  • 1 cup frozen corn
  • cups macaroni
  • 1 cup fresh baby spinach, chopped
  • Cheddar cheese for topping (optional)

Directions

  1. Bring large pot of water to boil, add macaroni and cook according to directions. Drain and return to pot.

  2. Meanwhile, in large skillet, begin browning soy sausage, add green peppers, onions, and garlic. Cook until sausage is crumbled and vegetables are tender.

  3. Add black beans, tomatoes, tomato sauce, spinach, and corn to sausage mixture. Simmer 5-10 minutes, or until heated through.

  4. Add sausage mixture to pasta and toss to combine. Serve hot with cheese on top if desired.
