Chicken saltimbocca with lemon butter

Ingredients
- 1 chicken breast
- slice of Parma ham
- sage leaf
- flour, for dusting
- olive oil, for frying
- juice of 1 lemon
- big knob of butter, for frying
- lemon zest, to garnish
Directions

Take the chicken breast and bat out between two sheets of cling film until about half as thick. Top with the Parma ham. Stitch on a sage leaf with a cocktail stick. Dust with flour and season. Pan-fry in the olive oil on both sides until tender. Add the lemon juice and the butter and give it a quick sizzle. Garnish with the lemon zest.
