Fettucini with Shrimp, Tomatoes and Basil

Ingredients

  • 1/2 c olive oil
  • 4 large tomatoes, seeded & coarsely chopped
  • 3 large garlic cloves, minced
  • salt & pepper
  • grated romano cheese
  • 1 lb uncooked medium shrimp, peeled & deveined
  • 1/2 chopped fresh basi
  • 1/3 c black olives, pitted & sliced
  • 1 tbsp minced shallot
  • 1 lb fettucini, freshly cooked

Directions

  1. Heat oil in large skillet over medium high heat.

  2. Add shrimp, tomatoes, basil, olives, garlic & shallot

  3. Season with salt & pepper

  4. Cook until shrimp turn pink, stirring frequently, about 3 minutes

  5. Pour over pasta & toss
