Marinated Butterfly Shrimp

Serves 4 people

Ingredients

  • 1 large raw shrimp, peeled & deveined
  • 1 tbsp fresh parsley, chopped
  • 1 tsp basil
  • 1 bay leaf
  • 1/2 c white wine
  • 1 tbsp oil
  • 1/4 tsp salt
  • 1/2 lemon, thinly sliced

Directions

  1. Press each shrimp flat into butterfly (cut if necessary)

  2. Place shrimp in shallow glass dish or plastic bag.

  3. Mix remaining ingredients except lemon & pour over shrimp

  4. Cover and refrigerate at least 1 hour

  5. Remove shrimp from marinate, reserve marinade

  6. Arrange shrimp on lightly greased hinged wire grill basket

  7. Cover and grill about 4" from medium coals 6-10 minutes, turning basket and brushing shrimp 2-3 times with marinade until shrimp are pink.

  8. Garnish with lemon slices and, if desired, fresh parsley
