Angel Hair Pasta with Shrimp

Ingredients

  • 1 pkg (16oz) angel hair pasta
  • 2 tbsp fresh parsley, chopped
  • 1 small red chili, seeded & finely chopped
  • 1/2 tsp nutmeg
  • 1/4 c olive oil
  • 2 cloves garlic, minced
  • 1/3 c white wine
  • 12 oz shrimp, peeled & devined

Directions

  1. Cook pasta as directed

  2. Heat oil in 4 qt dutch oven or 12" skillet over medium-high heat.

  3. Cook parsley, garlic & chili in oil, stirring frequently until garlic is golden brown.

  4. Stir in wine, nutmeg & shrimp. Reduce heat

  5. Cover & simmer about 5 minutes or until shrimp are pink.

  6. Drain pasta, mix with shrimp mixture in dutch oven.

  7. Cook over medium heat at least 2 minutes, stirring frequently
