Gino’s pizza dough

Makes 1 × 30cm pizza and 20 dough balls

Ingredients

  • 375g '00' strong plain flour
  • 1/2 tsp salt
  • 2 x 6g sachets fast-action dried yeast
  • 2 tbsp extra-virgin olive oil

Directions

  1. Put the flour and salt into a large bowl. Put your fist into the centre to make a well. Sprinkle over the yeast. Pour in 275ml warm water then add the oil. Begin by mixing together with a wooden spoon, then get your hand in there and mix to form a dough.

  2. Sprinkle flour on to the work surface, then tip the dough on to this. Knead it for 3 minutes until it becomes smooth and soft. Put the dough into a greased bowl, cover with cling film and leave in a warm, sunny position for about 20 minutes until it doubles in size.
