Ingredients
- 1 lb sweet italian sausage
- 2 large garlic cloves
- 2 c tomatoes chopped (approx 3/4 lb)
- 1 large zucchini, sliced
- 1 medium size bell pepper, diced
- 1 tbsp basil
- 8-10 oz fresh cheese tortellini
- 1 c chopped onion
- 5 c beef broth
- 1 8oz can tomato sauce
- 2 large carrots, thinly sliced
- 1/2 dry red wine
- 1 tbsp oregano
- parmesan cheese
Directions

Remove casing from sausage & saute in dutch oven over medium-high heat until cooked through, crumbling with back of spoon (about 10 minutes)

Transfer to large bowl

Pour off all but 1 tbsp drippings

Add onion & garlic and saute until translucent (about 5 minutes)

Return sausage to dutch oven. Add remaining ingredients except tortellini & parmesan

Simmer until vegetables are tender (40 minutes)

(Can be prepared 2 days ahead, cover & refrigerate, bring to simmer before continuing.)

Add tortellini & cook until tender (about 8 minutes.)

Season with salt & pepper & serve with parmesan cheese
