Ingredients
- 1 Tbsp. Extra Virgin Olive Oil
- dash of red pepper flakes
- 1 small organic onion, diced
- 2 cloves garlic, minced
- 1 small organic zucchini, diced
- 5-6 organic white mushrooms, sliced
- 1/2 organic red pepper, seeded and diced
- 1 c. organic eggplant, chopped
- 1/4 c. red wine
- 2 c. Diced Tomatoes, canned
- 1/2 tsp. oregano
- 1/2 tsp. basil
- 1/2 tsp. marjoram
- sea salt
- pepper
Directions

Heat large saucepan over medium heat.

Add oil, red pepper flakes, onions and garlic.

Sauté 2 minutes.

Add zucchini, mushrooms, red pepper and eggplant.

Cook for 3 minutes.

Add wine.

Cover and cook 2 minutes longer.

Stir in tomatoes, spices, salt and pepper.

Cover and simmer for 15 minutes.
