- 1 c. ratatouille, heated
- 2 tsp. nonfat organic ricotta cheese
- 1 tsp. Parmesan cheese, shredded
- 1 tortilla
- 1 organic red or green lettuce leaf, shredded
Directions

Spread ricotta cheese on tortilla.

Sprinkle with Parmesan cheese.

Spoon ratatouille over cheese and top with lettuce.
