Ingredients
- 4 boneless pork chops
- 1/4 tsp salt
- 1/4 tsp pepper
- 3/4 cup red onion
- 1/4 cup water
- 1/4 cup cider vinegar
- 3 tbs brown sugar
- 2 tbs honey dijon mustard
Directions

Sprinkle pork shops with salt and pepper. In a large skillet, cook pork over medium heat for 4-6 minutes n each side. Remove and keep warm.

Add the remaining ingredients to the skillet, stirring to loosen brown bits; cook and stir for 2 minutes or until thickened. Return chops to the pan. Reduce heat; cover and simmer for 4-5 minutes or until a meat thermometer reads 160
