Veggie and goat cheese quesadilla

Ingredients

  • 1 oz. Wild Oats Classic Goat Cheese, crumbled
  • 1 tortilla
  • 1 Tbsp. Frozen Supersweet Corn, thawed
  • 1/4 c. roasted red pepper, chopped
  • 1-1/2 Tbsp. Organic Black Beans, canned, drained and rinsed
  • 1 Tbsp. organic cilantro, chopped
  • non-stick cooking spray
  • 1/4 c. Salsa

Directions

  1. Spray sauté pan with cooking spray.

  2. Heat pan over medium heat.

  3. Place tortilla in pan.

  4. Crumble goat cheese over half the tortilla.

  5. Top with corn, red pepper, black beans and cilantro.

  6. Fold tortilla in half.

  7. Cook 2 minutes per side.

  8. Enjoy topped with salsa.
