Ingredients
- 1 TBSP vegetable oil
- 4 catfish fillets (about 1 1/2 lbs)
- 2 Tsp. Cajun seasoning
- 4 hoagie rolls
- Remoulade Sauce (recipe follows)
- 1 tomato, thinly sliced
- shredded lettuce
- Remoulade Sauce:
- 1/2 cup mayonnaise
- 1 1/2 TBSP sweet pickle relish
- 1 TBSP mustard
- 1/2 TBSP ketchup
- 1/2 Tsp. Cajun seasoning
- 1/2 Tsp. hot sauce

In a large skillet, heat oil over medium heat. Sprinkle catfish fillets with Cajun seasoning. Add fish to skillet, and cook for 3-4 minutes per side or until fish flakes easily when tested with a fork.

Spreak cut sides of hoagie rolls with desired amount of Remoulade Sauce. Top with catfish, tomato slices, and lettuce. Serve immediately.

Remoulade Sauce:

In a small bowl, combine mayonnaise, relish, mustard, ketchup, Cajun seasoning, and hot sauce. Cover and chill.
