Mini Chicken Salad Croissants

Ingredients

  • 1/3 c sour cream
  • 4 tsp lemon juice
  • 1/3 c mayo
  • 1 tsp salt
  • 1/4 tsp pepper
  • 3 c cubed cooked chicken
  • 4 celery ribs thinly sliced
  • 1c chopped mushrooms
  • 1/4 c chopped green pepper
  • 1/4 c chopped red pepper
  • 4 bacon strips cooked and crumbled
  • 1/2 c chopped pecans
  • 20 lettuce leaves
  • 20 mini croissants split and toasted

Directions

  1. In small bowl combine sour cream, mayo, lemon juice, s/p.

  2. In large bowl combine the chicken celery mushroom and peppers.

  3. Stir in the sour cream mix until combined cover and refrigerate at least 4 hours.

  4. Just before serving stir in bacon and pecans. Spoon 1/4 c onto each lettuce lined croissant.
