Blackberry Chicken

Ingredients

  • 2 tbsp plus 1/2 c fresh blackberries divided
  • 1/2 c reduced sodium chicken broth divided
  • 2 tbsp brown sugar
  • 2 tbsp white wine vinegar
  • 1 tsp olive oil
  • 2 garlic cloves minced
  • 3/4 tsp paprika divided
  • 1/4 tsp minced fresh thyme
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 tsp cornstarch.

Directions

  1. In small bowl mash 2tbsp berries, add 1/4 c broth, brown sugar vinegar oil garlice 1/4 tsp paprika and cumin.

  2. Place chicken in baking dish coated with cooking spray. Pour broth mixture over top.

  3. Sprinkle with thyme salt pepper and remaining paprika.

  4. Bake uncovered 375 for 20-25 min. Baste occasionally with pan juices. Remove chicken keep warm. Skim fat from pan drippings. In small saucpan combine cornstarch and remaining broth until smooth. Gradually stir in drippings. Bring to a boil cook and stir 1-2 min or until thickened. Serve over chicken.
