Red Potato and Green Bean Saute

Serves 5 people

Ingredients

  • 1 lb baby red potatoes, halved
  • 1 lb fresh green beans, trimmed
  • 1 1/2 tbsp olive oil
  • 1 clove garlic, minced
  • 3 tbsp fresh basil, chopped

Directions

  1. Bring large pot of salted water to boil. Add potatoes and cook until almost tender (about 15 minutes)

  2. Add beans & cook just until tender (about 3 minutes) Drain well

  3. In large skillet, heat oil over medium heat

  4. Add garlic and cook, stirring, 30 seconds.

  5. Add potatoes & beans, season with salt & pepper

  6. Cook, tossing to coat vegetables with oil until heated through (about 2 minutes)

  7. Toss in basil & serve
