Fresh Raspberry Vinaigrette

Ingredients

  • 3/4 c raspberries
  • 1/4 c reduced sodium chicken broth
  • 2 tbsp canola oil
  • 1 tbsp apple cider vinegar
  • 2 tbsp shallot minced
  • 2 tsp dijon honey mustard
  • 1/4 tsp kosher salt
  • pepper

Directions

  1. In blender puree fresh raspberries with chicken broth. Scrape puree through sieve into med bowl discard seeds.

  2. Whisk into puree canola oil, apple cider vinegar, shallot, dijon mustard and s/p.
